2021 Frederick Stevenson Chardonnay
95, 96 & iv10 clones from the Willsmore vineyard in Piccadilly Valley, Adelaide Hills. East facing slope @ average of 500 metres above sea level. Sandy loam on sandstone & ironstone. Planted 2004. Organically farmed.
Whole Bunch / gentle oxidative pressing, barrel fermented. 9 month barrel ageing on fine lees. The result is a textural chardonnay with a fine acid line running through it to pull all of the different components together.

How: Well the label makes me want to have it with a Quiche, but that probably won't work so have it with some Comté
