NV Jilly Wine Co. White Wolf of Cumbria Red
An inspired, NV blend of Merlot, Shiraz & Tannat.
Handpicked early at 8 baumé, destemmed and wild fermented in stainless steel; the Shiraz & Merlot components from regional NSW in 2018 & 2019 make for a vibrant core displaying purity & an elegant perfume.
The remainder of the wine is made up of approximately 18% Tannat from New England in 2017, which was fermented on skins for 10 months and remained on lees in neutral oak for 18 months, unsulphured, adding depth & structure to the final assemblage. Blended towards the end of 2020, the resulting wine was bottled unfined & unfiltered.

How: It's light but it has cojones. Certainly deserves a chill but will hold up to some meat beautifully.
