2018 Si Vintners Halcyon Cabernet
From the oldest vines on their home block (planted in 1978) has been farmed bio-dynamically (no certification) since our purchase of the vineyard in 2010. Post harvest the wine is destemmed and fermented in oak vats, remains on skins for 30 days and then basket pressed. Following press the wine was matured in French oak foudre over 2 yrs.
