2018 Si Vintners Halcyon Chardonnay
Also planted in 1978 in an amazing yet extremely low cropping vineyard. 2018 produced just 1200 bottles from the entire hectare. The ground is loam over decomposed granite/clay. Winemaking is very simple: fruit is whole bunch pressed into french oak puncheons where it was fermented and left to mature for 18 months. The wine was racked to stainless steel to allow for settling prior to bottling.
