2020 A.R.C Sparkling Riesling
After one of our wild ferments started to struggle through the cold Gippsland winter we decided to have a play. Left with just over 17grams of sugar we decided to add back some of our dry Riesling ferment along with a small amount of champagne yeast and bottle under crown seal. The resulting wine has spent just on a year on lees in bottle and is left un-disgorged. Searing acidity from the cool 2020 vintage married with a lovely toasty character gives the wine a multilayered feel. 20ppm added before bottling 1 year ago. 35 dozen made.

How: Cloudy, bubbly Riesling. A real treat. Have it with fish and chips.
