2021 Jilly Wine Co. Lone Ranger Shiraz
100% Shiraz from Antonio’s Vineyard in Canowindra. Certified organic and planted in the mid-90’s on sandy red clay loam soils at approximately 300-350m asl.
Destemmed for a wholeberry ferment. Hand plunged daily until pressed around a week or so into ferment. Wild fermentation finished in stainless steel where 90% remained, whilst 10% was sent to old oak to mature on solids for 5 months. All racked to tank & blended prior to bottling. Unfined, unfiltered. Preservative free.
