2015 Francois St Lo ‘Le Bois Guyon’ Cabernet Franc
Francois St Lo is a rising star in the world of natural wine. After Working for wine makers such as Oliver Cousin and Eric Dubois he has managed to acquire a place in the Anjou region of the Loire where he's set up a natural wine making commune of sorts. Like his mentors he likes to use horses to work the vines. And he uses the many caves on the property for vinification.
In our opinion this is the finest cabernet Francois has produced. 80 year-old Cabernet Franc vines from Saumur macerated whole bunch then pressed off to 400-litre barrels where the wine is left to develop over two and a half years, before resting in bottle for a year and a half before release. Patience is rewarded in a deep, glossy wine of extraordinary texture and finesse. No additions.
