Yūgen 2019 Sunbury Chardonnay
The fruit is from a vineyard in Sunbury that both Tim and I are very familiar with. Cool and slow ferment, transferred to barrel for 11 months. 30% one year old oak, 8% Acacia, the rest in old oak. The oak is well balanced and the Acacia gives it a cool complexity.
Apples, peaches and cream, some citrus zest.
Where: Sunbury Victoria
How: This is an excellent Chard. We had it with fish cakes.
