2023 Balmy Nights Fizz
Bright, spritzy, zesty drinking. With notes of lemon sherbet, nashi pear and fresh cut grass - this is a perfect for your incoming spring evenings, or excellent on a sunny winter afternoon.
Organic (although not certified) Sauvignon Blanc from cool climate NSW. A bit of a change from their previous fizz renditions. This is not quite a pet nat, not quite traditional method (like champagne) The first wild ferment is done in stainless steel, then a little bit of unfermented juice is added to start the second fermentation. The wine is bottled by hand, without added preservatives and without disgorgement.
