This wine is made from a block that is about 35% Semillon interplanted with Pinot Noir after unsuccessful grafting! We help them by swooping in to take the variety that nobody really wants (except us), hence, Bin Chicken.
Crushed and destemmed before being fermented in old French oak. The barrels are racked off gros lees before being allowed to complete malo with one barrel ullaged for complexity. This wine is always focused on being lemon balmy and morish.
