2022 Pranzegg Tonsur
The wines of Pranzegg, we think - do not get enough attention. Martin Gojer meticulously cultivates this high altitude vineyard on the steep slopes, right by the town of Bolzano. Fermented and matured on skins in concrete (We do love a bit of concrete maturation vessels here at ok.wines.) this wine is not quite skin contact, but heading towards it.
This is fine boned, exceptionally well made northern Italian almost 'skinsy', white. There are incredible aromatics in this wine - lillies, linden blossom, quince and peach are underpinned with an alpine herbaceousness. There's refreshing acid and a beautiful minerality that nips that heady nose in just a touch to give it the fine boned quality we've mentioned above.

How: We think something potato/ricotta/butter involved would be brilliant - gnudi, brown butter and sage gnocchi...ravioli...the list is endless!
