2021 Wilkie Wines Country Mile Sauvignon Blanc
I’ll start from the start. First I hired a truck and drove to the Pyrenees to drop off empty picking bins for the vineyard crew to harvest into overnight. Then the Moonambel Resort, the modestly named local pub, took us in and even extended their kitchen hours to suit our tardiness. In the morning I picked up the full bins, took the grapes back to the winery in Bacchus Marsh and destemmed and pressed almost all of it.

This wine has imprints of Sauvignon Blanc that will make your mum still like it - but no perceptible asparagus, cut grass notes which sometimes makes us wince about this grape. It's fresh, with grapefruit, lemon zest and a tropical backbone that gives it some complexity without slapping you in the face with it. If you don't like Savvy-B normally, I reckon this is a good bet to introduce you to what it can be.

How: Fresh acid and juicy fruit - great with anything that packs a punch in flavour. We had this with Biryani the other night and it was awesome. Maybe not super spicy - go for an off-dry Riesling for that.
